Frosted Zucchini Brownies

I've decided that this blog should now be subtitled: "WATCH ME GET FAT". Pinterest is terrible for the waistline, let me tell you that. There are so many recipes out there. Most I want to try, ALL I WANT TO EAT. Unfortunately I steer clear of the healthy recipes and veer directly to the SUPER FAT, CELLULITE MAKING recipes (that should be a board name, you know).


The recipe that I've included today is my attempt at making something healthy. HAHAHAHAHAHAHAHAHA. I mean, there's vegetables in it for Geeb's sakes! And of course, my backyard garden is slowly becoming abundant in the main ingredient (you know, the one that isn't sugar, flour and chocolate, of course!) Yes, ladies and gentlemen, I made Zucchini Brownies (with a little bit of frosting on them for good measure). (Click HERE for the recipe)

So, I followed the recipe exactly, which is generally my style for the first attempt. After that I take liberties with my own ideas about "improving" the original recipe (like adding more vanilla, generally undercooking a little bit, turning the temperature on my stove down a little because mine's smaller than the average bear), but again, as this was my first go at said "healthy brownies", I decided to follow the directions religiously. I am also finding lately that my baking pans are in a terrible state of overuse and underwash, therefore rather than "greasing" pans, I choose the parchment route. Less mess, less burn, less wash...see there's method to my madness after all.

The recipe noted that after all ingredients had been mixed, it would appear dry. THAT WAS THE UNDERSTATEMENT OF THE CENTURY. The ingredients looked essentially like breadcrumbs. I was skeptical to say the least, that this would turn out in a way that I would be pleased, but I was willing follow through.Once the timer beeped, I opened up the oven and out came some wonderful, moist (YES! MOIST!) brownies. Now, of course they had to cool AND BE FROSTED, before I could make a decision as to whether or not this recipe was a keeper. So, I set off to sacrifice another inch of my bootie and mixed together my frosting ingredients. In a completely turn of events, the ingredients were wet. Like really wet. My friend said, "maybe it's supposed to be a ganache", and then I showed her the picture above... So, I had to improvise...which means add whipping cream. So, I added, and added, and added until FINALLY it thickened enough for me to frost these suckers within an inch of their life!

Again, being the martyr that I am, I volunteered to try the first bite. Not quite what I expected. They weren't traditionally sweet (perhaps due to the switch in frosting). They were actually more salty than I had initially anticipated as well. BUT all in all, they tasted good, and my kids ate them (FULLY KNOWING THERE WERE ZUCCHINIS FROM THE GARDEN IN THEM!!!!). So that, to me, is a success.

Next time I may switch the oil for some Greek yogurt and maybe use a half a teaspoon of salt rather than the whole one. I will definitely have to seek out a better frosting to use as well. Needless to say, the base to these brownies is one that I like. I have now changed this recipe from the "recipe to try" board on Pinterest to "favourite recipes".
